Funfetti Waffles (Gluten Free)

“Why did she have to go and mess with a good thing?” you may ask. Let me tell you, it was not my intention to bring gluten-free flour into this, but with Marissa and I trying to eat healthier recently, we have been using rice flour for a lot, and I was feeling adventurous.

After hour 3 of Shameless reruns, I was craving some waffles. Despite the box of frozen Eggo in the fridge, I wanted something better. Luckily, I have a kitchen full of supplies for just the occasion. Kids will love these. The benefit of the rice flour is that they are cakier than normal waffles. I topped them with some Reddi whip and berries and my craving was happily satisfied.

Funfetti Waffles (Gluten Free)


  • 3 egg whites
  • 2 c gluten free flour (I used rice)
  • 3/4 c fat free milk
  • 1 1/2 tsp vanilla
  • 2 tbs granulated sugar
  • 4 tsp baking powder
  • rainbow sprinkles


  1. Combine all ingredients in bowl, add sprinkles.
  2. Turn on waffle iron and spray with cooking spray.
  3. Pour about 1/3 cup batter into each waffle, let cook for about 4 minutes or until browned and no longer liquid in middle.
